Thomas Oscar is a Research Food Technologist with the Agricultural Research Service of the U. S. Department of Agriculture at the University of Maryland Eastern Shore in Princess Anne, MD. He conducts research focused on developing models that predict growth, survival, and death of Salmonella on chicken meat and meat products. Salmonella is a leading cause of foodborne illness in the United States and throughout the world and chicken is often the source of foodborne illness outbreaks from this human bacterial pathogen. In this webinar, Dr. Oscar will describe and demonstrate how he uses NeuralTools to develop these important models for predicting behavior of Salmonella on chicken during home storage and meal preparation and how these models can be used to predict chicken safety.
